Ross’s devine Passionfruit Syrup Cake. This easy cake is super tasty and moist thanks to the yoghurt and the syrup – it’s the perfect treat for afternoon tea or dessert with family and friends.
Ingredients:
- 250g butter, diced and at room temperature
- 1 cup Greek or natural yoghurt
- 4 eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups plain flour
- 1 1/3 cups caster sugar
- 4 teaspoons baking powder
- 1/4 cup passionfruit pulp
- 1/3 cup caster sugar
Method:
- Pre heat oven to 180C.
- Grease and line a 22cm springform cake tin. If using a bundt tin, make sure it is well greased.
- Combine the butter, yogurt, eggs and vanilla in a bowl, stirring until combined. It’s okay to have small flecks of butter in the mixture.
- Combine the flour, 1 1/3 cups caster sugar in a bowl. Add the yoghurt mixture and stir until well combined. Pour into the cake tin.
- Bake for about 50 minutes, or until a skewer inserted into the cake comes out clean.
- While the cake is warm, combine the passionfruit and extra sugar in a bowl. Spoon over the top of the cake. (If using a bundt tin, invert the cake onto a plate and spoon the syrup over the top.)
