Passionfruit Syrup Cake

May 14, 2020

This easy cake is super tasty and moist thanks to the yoghurt and the syrup – it’s the perfect treat for afternoon tea or dessert with family and friends.

  • 250g butter, diced and at room temperature
  • 1 cup Greek or natural yoghurt
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups plain flour
  • 1 1/3 cups caster sugar
  • 4 teaspoons baking powder
  • 1/4 cup passionfruit pulp
  • 1/3 cup caster sugar

  1. Pre heat oven to 180C.
  2. Grease and line a 22cm springform cake tin. If using a bundt tin, make sure it is well greased.
  3. Combine the butter, yogurt, eggs and vanilla in a bowl, stirring until combined. It’s okay to have small flecks of butter in the mixture.
  4. Combine the flour, 1 1/3 cups caster sugar in a bowl. Add the yoghurt mixture and stir until well combined. Pour into the cake tin.
  5. Bake for about 50 minutes, or until a skewer inserted into the cake comes out clean.
  6. While the cake is warm, combine the passionfruit and extra sugar in a bowl. Spoon over the top of the cake. (If using a bundt tin, invert the cake onto a plate and spoon the syrup over the top.)

And voila! Enjoy!!
